Shrimp and Grits Bites
Southern style party flavors! These Shrimp and Grits Bites are easy to prepare and can be served hot or cold at your One Purse Gathering! Use this recipe as is or add your own flavors and style. Cook the shrimp in a skillet with your favorite seasonings, or for a more traditional dish, boil the shrimp with lemon, garlic, and bay leaves. Make the mini Grit Cakes the easy way - in a mini muffin pan!
Ingredients for Grits
2 cups milk
1 Tsp minced garlic
2 Tbsp minced onion
1/2 cup stone ground grits
1 cup shredded cheese
2 Tbsp olive oil
Pinch of cayenne pepper
Handful of micro chives, diced
Ingredients for Shrimp:
15-25 peeled and deveined shrimp
*small to medium sized shrimp
(quantity depends on the size of your party)
First... combine the milk, garlic, and onion in a large sauce pan. Heat on medium high until you scald the milk. Reduce to a simmer. Using a wooden spoon, slowly stir in the grits. Cook over low heat - stirring constantly - for 11 minutes. Remove from heat and stir in the cheese. - set aside.
*(this is a good time to infuse some of your own creativity, add diced ham, or colorful diced peppers for added flare!)
Second... Ideally for this recipe you want 25 fully cooked shrimp - each about the size of a quarter. There are many options for shrimp. Most grocery stores sells shrimp that are pre-cooked, peeled, and deveined. Option 1. Skillet on medium heat with olive oil, salt and pepper - cook shrimp for 4-5 minutes. Option 2. If you opt for the more traditional boiled shrimp, don't forget to add to the water - 2 cloves of garlic, 1/2 lemon, and 2 bay leaves. Boil shrimp for 6-8 minutes. If serving cold place shrimp in an ice bath to stop the cooking.
Third... Take mini muffin pan and pour olive oil into each muffin section. Take a small scoop or spoon, and place approx. 2 Tbsp of grits into each muffin section. Bake in the over at 350 degrees for 10 minutes. If serving hot - let cool for 4 minutes. If serving chilled - place in fridge for 1 hour.
Fourth...Finally, for serving hot shrimp and grit bites, take your grit cakes out of the mini muffin tin, place shrimp on each and sprinkle some diced chives over the top. Enjoy!
