Spinach Tomato Toast Points 

(in less than 15 minutes)

This is a simple and fun recipe you can make fast and serve easy. You can serve a larger platter of the spinach and artichoke dip if you're having a buffet and set aside a small cup size portion for these fancy little bites.

The main component is the spinach and artichoke dip, with the grated parmesan cheese serving as a thickening agent. In this version of the recipe we use some delicious rotisserie chicken - however feel free to take some creative liberty and mix in any protein you see fit. Or for your vegetarian guests - add some nice mushrooms or roasted red peppers!

Here's what you'll need:

 

  • 1 Cup spinach and artichoke dip
  • 1/4 Cup chopped chicken (may substitute additional veggies, bacon, etc)
  • 3 Tbs Grated Parmesan cheese
  • 4 Slices of bread
  • 1 beef steak tomato
  • Extra virgin olive oil 
  • Salt and pepper

 

First... Preheat the oven to 300 degrees. Next, cut your slices of bread into about 1 inch squares. They do not have to be perfect - try for 6-8 pieces out of each slice. Once the bread is cut - sprinkle the pieces with some olive oil and salt - then toast in the oven for about 2-4 minutes to give them some crunch. Remove from oven and set aside (leave the toast points on the baking sheet - to use later). *Note: toast points will make a second stop in the oven so feel free to leave the oven on while you assemble your toast points. Never leave the oven on unattended.

 

Second... Dice your chicken into small squares until you have about 1/4 cup. In a small bowl, mix the chicken (or other protein/veggies) into 1 cup of spinach dip and add 3 Tbs of  Parmesan cheese. The mixtures should be thick enough to stand up on its own. Add more Parm cheese as needed to thicken and place in the microwave for 30 seconds to heat up.

 

Third...Take your tomato and cut it into 1/4 sections. Take one section and slice very thinly lengthwise - this will give you cute little triangles. (use a small serrated knife for tomatoes) Then place approx. 1 Tbs of the spinach-chicken mixture onto your toast points. Place one slice of the tomato on each piece as well.

 

Fourth...Finally, you're ready for the second trip to the oven. Once all your finished toast points are loaded onto a baking sheet - place in your 300 degree pre-heated oven and bake for 6-8 minutes, serve hot. These will be such a hit at your One Purse Gathering.
